Hello what are the requirements to be allowed to log the 787 flights ?

Pilot's handbook section 4.0 says "Senior Captain" rank to fly the 787 on regular flights in your FREQ/Bid.

Section 12.2 says for GFIs (and Theme flights) states:

1. Fly an aircraft suitable for the GFI. Rank requirements do not apply to GFI events as long as you fly an aircraft suitable for, or specified by, the GFI event information.

So you are 1 checkride away for your regular flights, but can fly it for most GFIs and Theme Flights.
