I agree with Bert - LevelD 767. I have this a truly enjoy flying this one. However i don't have Captain Sim 757 so I can't compare.

I have both and my perception is that the Captain Sim 752 has a LOT of eye candy which is nice if your computer can handle it. Cockpit-wise they are almost neck and neck with some minor differences. What makes me favor the LevelD is the actual feel of the aircraft. I think the CS752 feels like it has the FDE's of a default aircraft. The 762 on the other hand is more akin to the way I would expect a wide body heavy to respond. Not having any real world cockpit experience in either I obviously can't say one is more realistic than the other, but 1800+ hours of sim time have given me some expectation of what it should feel like. It doesn't matter what aircraft you fly, if it's fully loaded with fuel and payload it will have some characteristics of heaviness to control inputs. The CS752 seems to react the same way whether I load it up empty or at max gross weight. When I can rocket off the runway at 20-30 degrees nose up and 250 knots in an aircraft with enough fuel for a transcontinental flight I don't think that's realistic. The LevelD definitely lets you know if it's loaded down.
I don't know if this accurately conveys the reason for my preference, but at least I tried.
